Chicken Soup with Shichimi Dumplings

As soon as it gets cold I crave something comforting, like this chicken soup with shichimi dumplings. These are traditional dumplings with a spicy-citrusy twist. They’re fluffy, a bit crackly on the top, and the whole thing feels a big warm hug.  As the colder months start to creep in I crave soups, and my guess is, you do too. Have you ever tried Tonjiru? It’s a Japanese miso pork stew and my version is simple but packed with flavour. I have this on repeat through winter, as well as this chicken soup with shichimi dumplings. Japanese Sweet Potato Rice

Tender Japanese Sweet Potatoes with earthy shiitake mushrooms, all cooked cooked on top of flavourful fluffy rice. Filling and comforting, this rice is perfect as an on-the-go onigiri or a side dish to a mid week meal. This recipe uses an instant pot, but it’s suitable for rice cookers and stove top too! Sweet potato in rice may sound odd, but don’t knock it till you try it. Japanese sweet potato has a chest-nutty flavour, so that, combined with the earthy shiitake goodness – so tasty.  This recipe is a variation of Japanese mixed rice, or Takikomi Gohan in Japanese. Japanese Mushroom Rice, or Kinoko Gohan in Japanese, is a variation of Takikomi Gohan which means steamed mixed rice. One Pot Salmon, Carrot and Root Rice.

This one pot Salmon, Carrot and Root rice recipe is perfect for when you’re feeling lazy but want to get more nutrition into your meal. Its super easy – chuck all the ingredients into the same pot, chill on the sofa and savour how easy it all was whilst eating it. Why I love This Dish I am such a fiend for a one pot recipe. Even though I love cooking there are days where I just need something quick and easy, bonus if it tastes good too. This is one of those recipes. It’s packed with nutritious veggies and protein and has a good glug of Japanese flavour which makes everything taste super yummy. What can I serve with this? I love that this meal is already nutritionally balanced, which makes it perfect for a lunchbox – I like to make them into onigiri. To make this into a filling dinner I would serve it with some Tofu Miso Soup and some smokey Miso Aubergines.
