Miso Recipes

Miso is everywhere these days, and for good reason. It’s in my top 5 Japanese pantry essentials because of how versatile it is. This list includes a variety of miso recipes – soups, marinades, even caramel! This humble paste can do it all.

But what actually is miso? It’s a fermented paste made from cooked soybeans, koji (a helpful fungus), and salt. It’s salty, slightly sweet and has that famous umami depth. Have I convinced you yet? Okay good, now you can dive into these miso recipes…

P.s – this post is regularly updated with new miso recipes, so keep an eye out!

Soups

Kabocha Miso Soup

A bowl of Kabocha Miso Soup with a wooden spoon resting on the side.

It’s velvety, it’s pumpkin-y, and extremely comforting. Kabocha has a distinctly rich flavour and texture but if you can’t find it use your favourite squash instead!

Tofu Miso Soup

A bowl of Tofu miso soup.

Have you ever wondered what is in Miso soup? The simplicity might surprise you. Once you learn how to make a basic miso soup, you won’t stop.

Natto Jiru (Natto Miso Soup)

A bowl of Natto Jiru (Natto Miso Soup) with green onions and shichimi sprinkled on top.

If you don’t like natto, you need to try it in miso soup. The texture is way less noticeable and the flavour less intense.

Pork Miso Soup (Tonjiru)

A bowl of Pork Miso Soup (Tonjiru) on a tea towel with a bowl of rice and steamed kabocha on the side.

Warm melty bites of pork belly in a rich onion and miso based soup. This tonjiru is the ultimate winter warming stew.

Mains & Sides

Miso Chicken Thighs

A bowl of miso chicken thighs chopped up with some smashed cucumbers, all on top of some white rice.

The marinade only contains 3 ingredients and leaves you with juicy chicken each time. It’s freezer-friendly too which makes it perfect for meal prep.

Miso and Peach Chicken Salad

Miso and peach – the dream team. The saltiness of miso and the subtle floral sweetness from the peach is a match made in heaven and should be on everyones summer recipes list.

Miso Aubergine

A plate of Miso Aubergines.

Melty aubergines with an umami packed miso sauce is such a dreamy combination. Drizzle with some chilli crisp for a kick of spice and a couple parsley leaves for a hint of freshness – perfection.

Sauces & Marinades

Miso Marinade

A jar of Miso marinade with a spoon scooping it out.

This miso marinade is the ultimate Japanese cooking hack. It tenderises meat beautifully, adds quick flavour to vegetables, and keeps in the fridge for ages.

Sweets

Puff Pastry Twists (Miso Caramel and Sesame)

A close up of a sheet of puff pastry twists (miso and sesame flavour)

Flakey twists of buttery puff pastry brushed with miso caramel and finished with sesame seeds. The miso is salty so it’s kinda like a salted caramel flavour.

Miso Caramel (3 Ways)

Three spoons on a plate covered with miso caramel.

Do you find making caramel intimidating? It might be easier than you think, but do I know at least one of these methods is absolutely foolproof…
