Why I Love This Recipe

Miso soup is the first Japanese dish I learnt to make. I was in my first year of Uni and super excited that there was an Asian supermarket close by. I grabbed loads of ingredients I recognised and ran home excited to make miso soup but to my disappointment, it tasted pretty bad. I was unaware of a very key ingredient – Dashi stock. We’ve come so far!

How to Make Simple Miso Soup

Step by step instructions for making a simple miso soup with dashi powder.

  1. Heat water.

    Add 250 millilitres of water to a pot and bring to a gentle heat. It doesn’t need boil but you want it hot.

  2. Add Dashi.

    Add just 1/4 teaspoon of dashi to the hot water and mix.

  3. Add in any extra ingredients you want.

    At this stage add whatever else you want and let it cook. Do not add the miso paste until the very end.

  4. Mix Miso.

    In another container, mix together 1 tablespoon of miso and 2 tablespoons of dashi from the pot. This will help loosen the miso into a pourable consistency.

  5. Add Miso and Enjoy.

    Turn off the heat, pour in the miso and mix together. Always switch the heat off because boiling miso changes the flavour completely. Serve and enjoy!

This recipe will teach you how to make one small bowl of miso soup. I wrote this recipe to show how little you need to create a simple miso soup, something I wish I had when I was first learning how to make it.

Ingredients
  

  • 250 ml Water
  • 1/4 tsp Ajinomoto Hon-Dashi stock granules
  • 1 tbsp Miso (1.5 if you prefer a stronger miso taste)

Instructions
 

  • Bring the water to a simmer then add in the dashi powder.
  • At this stage, you can add in whatever other ingredients you want.
  • Add the miso paste into a jug and add in 2 tbsp of the hot dashi, mix together until fully combined.
  • Kill the heat before adding in the Miso Paste. Cooking Miso at a high heat completely changes the taste.
  • Pour in the miso paste mixture.
  • Serve and Enjoy!
