Can I use other vegetables? 

Absolutely but keep in mind this recipe was developed with leafy greens in mind, so watch out for the veg to sauce ratio. Spinach is a popular option for this side dish but you can get creative! 

Should I use toasted or un-toasted sesame seeds?

Toasted – 100%. Toasted sesame seeds have waaay more flavour. If you can only find un-toasted, dry-fry in a pan until golden and toasty. 

What are spring greens?

These veggies are called different names across different supermarkets – greens, British greens, spring greens, cabbage greens. I’m honestly a bit confused on exactly what they are…

Ingredients 

  • 250 ish spring greens 
  • 3 tbsp toasted white sesame seeds
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp sugar (optional)

How to Make Goma-ae (Sesame Spring Greens)

  1. Prepare approximately 250g of spring greens by washing and slicing them into medium sized strips. 
  2. Blanch the greens for a 3-5 minutes in boiling hot water. The longer you boil them the less flavour they will have.
  3. In a large bowl mix together 3 tablespoons of ground toasted sesame seeds, 1 teaspoon of soy sauce, 1 teaspoon of sesame oil, and 1/2 a teaspoon of sugar.
  4. Thoroughly drain the greens and add them to the bowl with the sauce. Toss everything together until the greens are fully coated.
  5. Serve immediately or store in the fridge for 3-4 days.
