Goma-ae Spring Greens (Sesame Spring Greens)

- 250 spring greens (approximately)
- 3 tbsp toasted sesame seeds
- 1 tsp Japanese soy sauce
- 1 tsp sesame oil
- 1/2 tsp sugar
Prepare approximately 250g of spring greens by washing and slicing them into medium sized strips.
Blanch the greens for a 3-5 minutes in boiling hot water. The longer you boil them the less flavour they will have.
In a large bowl mix together the ground toasted sesame seeds, soy sauce, sesame oil, and sugar.
Thoroughly drain the greens and add them to the bowl with the sauce. Toss everything together until the greens are fully coated.
Serve immediately or store in the fridge for 3-4 days.
