One Pot Salmon, Carrot and Root Rice Recipe.

This one pot Salmon, Carrot and Root rice recipe is perfect for when you're feeling lazy but want to get more nutrition into your meal. Its super easy - chuck all the ingredients into the same pot, chill on the sofa and savour how easy it all was whilst eating it.

  • 1 Pressure Cooker (or Rice Cooker)

Ingredients
  

Ingredients

  • 1.5 cups short/medium grain rice
  • 2 salmon fillet
  • 1 small carrot (chopped into small chunks)
  • 1 small lotus root (sliced thinly)

Seasonings

  • 1.5 cups dashi stock
  • 2 tbsp sake
  • 2 tbsp mirin
  • 2 tbsp soy sauce
  • 15 g grated ginger

Instructions
 

  • Prepare the rice by rinsing it approximately 3 times, until it runs mostly clear. Re-fill and soak for 30 minutes.
  • Combine all the ingredients together for the stock and set aside.
  • Once rice has finished soaking, drain and add in the seasoned stock. Layer in the carrot, lotus root and salmon fillets. Don't mix at this point, or else it won't cook properly.
  • Cook using your preferred method for cooking rice. See notes for a link to a guide on stovetop, instant pot and rice cooker.
  • Once finished, take out the salmon and break it into chunks. Add it back to the rice and mix everything together.
  • Serve and enjoy!
